- 3/4 cup butter
- 3 tablespoons sweet dry sherry
- 3/4 teaspoon salt
- 3/4 teaspoon paprika
- 3/4 teaspoon dried thyme, crushed
- 1/4 teaspoon white pepper
- 6 cup soft bread crumbs
- 1½ cup sliced celery
- 1 cup dried tart cherries
- 3/4 cup coarsely chopped pecans
- 1/4 cup chicken broth
- 1 10 - 12 lbs turkey

| Cherry Pecan Stuffed Turkey Recipe Instructions & Tips:For stuffing: Cook fresh onion in butter, in a medium skillet, until tender but not brown. Stir well to evenly combine in the Marsala, sherry, or broth; salt; paprika; thyme; and white pepper. Transfer the mixture to a large bowl. Add bread crumbs, celery, cherries and pecans then toss to mix well. Drizzle with the chicken broth then toss. Rinse the turkey and pat dry. Spoon some of the stuffing into the neck cavity then fasten the neck skin with a skewer. Spoon the prepared stuffing carefully, into the body cavity. Tie the drumsticks to the tail. Place and arrange the turkey in a shallow roasting pan, breast side up, then place the pan on a rack. Insert a meat thermometer into the thigh muscle. Place the turkey in the oven at 325° F. and roast, uncovered, for 3-3¾ hours or until the meat thermometer registers 180° F to 185° F (cut string between drumsticks when the turkey is two-thirds done). Allow the roasted turkey to stand, covered, for 15 to 20 minutes before carving.
