- 2 cups finely chopped onions
- 1/2 cup finely chopped celery
- 1 teaspoon poultry seasoning
- 1 bay leaf
- 2½ lb ground turkey
- 3 eggs (break the eggs in a separate bowl to ensure it's fresh), beaten
- 1/2 cup rolled oats
- 1½ teaspoons salt
- 1 teaspoon freshly ground black pepper
- 3 cups homemade stuffing
- 1 (12oz) container ocean spray cranberry-orange crushed fruit

| Cranberry Glazed Turkey Loaf with Stuffing Recipe Instructions & Tips:Melt the butter over a medium heat, in a large skillet. When it foams, add the onions, celery, poultry seasoning and bay leaf then cover and cook for 8 to 10 minutes, stir once or twice, until the vegetables are lightly colored. Remove from heat, discard bay leaf and allow to cool to room temperature. Preheat oven to 350F. and position rack in the center of the oven. Combine the ground turkey, fresh onion mixture, eggs (break the eggs in a separate bowl to ensure it's fresh), oats, salt and pepper together in a large bowl and mix thoroughly. Take approximately half of the mixture and pat it into the bottom of a long 9-cup loaf pan. Press a shallow trench in the middle using the back of a spoon, running the length of the pan. Spoon all of the stuffing into the trench. Mound the remaining turkey mixture over the stuffing, completely enclosing the stuffing. Spread all of the crushed fruit evenly over the top of the loaf. Place in the oven and bake for approximately 1¼ hours or until an instant-reading thermometer inserted in the turkey portion of the loaf registers 160F. Allow the loaf to rest on a rack for 10 minutes before slicing. Serve hot.
