Crispy Citrus Turkey Recipe Ingredients required:- 10 lbs Turkey, thawed, neck and giblets removed
- 6 whole mandarin oranges
- 20 sage leaves
- 6 sprigs thyme
- 2 tablespoons margarine, melted
- 1 teaspoon salt
- 1 teaspoon pepper
- 3/4 cup Ginger

Crispy Citrus Turkey Recipe Instructions & Tips:Preheat oven to 325 degrees. Rinse the turkey inside and out then pat dry. Slice & carve 4 mandarins. Quarter the 2 remaining mandarins. Lift the skin covering the turkey breast then slide as many of the mandarin slices, sage and thyme sprigs under the skin as possible. Place and arrange any remaining mandarin slices and herbs in the cavity. Truss the legs together or tuck under the band of skin. Lift the wings and twist under the back. Place the turkey in a shallow roasting tray, arrange the quartered mandarins around the turkey and place on a rack. Lightly brush the turkey with melted margarine then sprinkle with salt and pepper. Place in the oven and roast for 3 to 3½ hours, basting often or until meat thermometer inserted into inner thigh registers 165 degrees. Tent with foil if browning too quickly. Increase oven heat to 425 degrees. Evenly brush the turkey with Mandarin Ginger sauce then place back in the oven. Roast for 15 minutes or until skin is dark and crispy and a meat thermometer registers 170 degrees. Transfer turkey to a cutting board. Tent with foil and allow to stand for 30 minutes before carving.
